If you have a sunny window, you can grow lettuce, carrots, celery all in water, using the plants themselves as starters. Just place the base of your plant in water and it will re-grow.

You can use containers to grow veggies, use good potting soil, fertilizer. Make sure the pots are good sized. You will probably need a grow light in order to have them grow right and not be real spindly. Make sure they get the water and light they need and you should be able to grow all the veggies you want.
I use felt/cloth bags. We use good potting soil, perilite & clay pebbles. We have floor to ceiling windows in most rooms so that's where we place them. A little coffee grounds, tea bag contents & epson salts also help.
I forgot to say, if you grow tomatoes, go to your local greenhouse and purchase a spray for blossom end rot, potted tomatoes tend to lack calcium which is what causes blossom end rot. You spray the leaves of the tomato before the tomatoes start to ripen to prevent it. I had a potted tomato this year that got it. After I sprayed the leaves, no more tomatoes got blossom end rot.
