There is bead board that is wet room rated. Use that and you're good to go!
unfortunately, yes. i will admit its not my favorite surface. you will need trim pieces to finish off the bead board. and a good paint or poly coating to seal the wood. if you don't seal it it will absorb moisture from the steam causing the wood to swell.
Yes, I do it all of the time - but not in the shower or tub area - it is not water proof. Here is one of our bathroom redos with beadboard on the wall.
