You could paint it. The house I grew up in had pine paneling on one wall in the living room that made the room dark and outdated. I helped my mom paint it white and it looked amazing! Use a good stain blocking primer first.

Find a woodworker (a local fellow) and negotiate removal for his usage---look in phone books, newspapers, chamber of commerce etc---replace with what ever material you wish.

Since walnut is very beautiful and expensive, if you kind of like the ship lap look maybe depending on how large a wall it is you may have enough to apply horizontally to mimic that look over fireplace or in your powder room as a feature wall. You could depending on thickness, make it a table. But hold onto it regardless something will come to mind.

Fill in the lines and then cover with either primer and paint or apply one of the new wall coverings to make a nice feature wall around your fireplace.

If this is REAL wood consider keeping it if you like it. Sometimes changing other features is enough to update, and having something different adds charm. I have a room with real knotty pine. Have grown to really like it, and worked it in to the room.
