You can them as early as February but I would wait until March. The old Farmer always use to say Saint Patrick's Day. Which is 17th of March 2018.

The Farmer's Almanac says Mid March for the start day. The moon for below ground crops say 17- 23 March this year. Probably more information than you want to know!

When we lived in TN (just off i 40 same as OK) we planted potatoes end of Feb. and onions about then or a week or so later. Potatoes do well if planted early, mom said. She was raised on a farm that grew them in Neb. and she said they do better early rather than when it gets hot out. (less disease)

Potatoes are planted from Valentine's Day (Feb. 14) to mid-March and it takes about 90 days until harvest.
