Can you post a photo? I am not sure I know what "side end splashes" are. You can't change the color of granite.

What color is the granite? and what color do you want it to be?

  http://bathandgranite.com/blog/how-to-stain-granite-tile-to-enhance-color/ I would check to see if your seal is strong, drop some beads of water on the granite and see if it rolls off or absorbs and creates a darker area. The more porous the granite the better it will take a stain. Seems like from the article they are using wood stain to enhance granite color. In the past I've used oil colors and worked it into the stone and stained it. I would test underneath the slab to see if you like the results. Of course you can only add color to give it a color tone or make it darker, you can't use stains to make it lighter. Seal when done.
