I have elephant ear plants that froze do I cut down to grown?

first of all they are bulbs not hardy for your area.they should have been dug out and dried and stored.I would venture to guess they are done

There is a chance the bulbs may have froze and are mush, If the ground is workable now, I would carefully dig down to the bulbs and see if they survived. Up here in the north we have to dig them up each fall or the bulbs will freeze and rot.

I always cut my dead leaves off close to winter, cover them with a thick layer of leaves. They always come back in the spring, then I put some mulch over the leaves and they grow until frost.

You are in the deep south, even though the foliage has died, chances are the rootball is still in tact and alive. Trim off the dead bits and see what happens, you have nothing to lose. In the spring if it doesn't send out new shoots then dig out and dispose.

I cut mine back to the base every year. They are pretty hardy...
