You could remove the counter, take apart the existing cabinets and rearrange them to fit a new configuration that best suits you. For a new counter top you could cut and reuse your old one, or visit a salvage company for returns or mis-cuts. As an added bonus, think of using an old dresser with a different top as your kitchen island. The cabinets can all be painted for a completely new look. So many budget friendly options...
