Easily scratched paint finish- help!

What do I use to remove polyurethane (incorrect spelling) from cabinets to repaint. Cabinets were painted with mineral fusion paint with two coats then poly applied. The cabinets get scratched easilY? Any suggestions how to cure without removing the poly??
