Spackling in kitchen ceiling is gross, how do I clean or do I replace!

    when you say spackling, do you mean texture? if it is just dirty and greasy, it can be cleaned and painted. or kilz-ed and painted without cleaning. unless the house was built in the 60's the ceiling is hopefully made of gypsum board, which is also known as drywall.
