    Redwood is pretty, for counter I would use bar top epoxy pour.

    Redwood would be beautiful! Bar Top Epoxy would be beautiful as well! Redwood is very rot resistant and it likes to make Paint peel. I would test whatever you use to make sure it’s durable.

    I would do same as with cutting board use oil like olive or something like it

    A couple of ways. One would be by treating it like a butcher block, and thoroughly oiling it down. My kitchen table is butcher block. I take either veggie oil, or olive oil, saturate a paper towel. Wipe it down. Let it sit for a bit. Come back and wipe off excess. The other would be clear water based polyurethane. Or water based marine grade polyurethane. Like I said in above post, Don't shake It! Stir gently, it causes bubbles. Use a foam paint brush, keep it wet. Let dry completely, come back with a 400 grit sandpaper and sand away any imperfections. Suck up dust with vacuum cleaner. Wipe down with tack cloth. Repeat.
