Peel and stick are much better than they used to be. And, should something happen to one square, you can take it up and replace it. You just have to be sure the floor is very clean and with no bumps or pits. Here are some videos that will help.
I like sheet vinyl. It is totally water proof (no seams). Is easy to install. All you need is the vinyl, a can of glue from a carpet store made for this, a utility knife and trim. You will need trim for any type of flooring you install. If the kitchen is small enough you can even get left over pieces at a fraction of the new price. Ours looks as good as it was when it was new (over 10 years ago).
I used vinyl peel and stick "oak". Very quick. Be sure to have the floor clean, make sure the doors/cabinets will be able to ride over the new level of floor.
