If some doors are missing, you could always remove all the doors (especially on top) and go with an open concept. Then you could put decorative contact paper on the walls inside the cabinets and with the doors off you would see the design and have something different. You could also paint them, which is more economical than replacing them. You just wash them down with tsp cleaner, put on a good adhesive primer and then paint them.

Sounds like you have a project there. Pinterest will likely be a great inspiration and there is also this site: http://www.hgtv.com/design/rooms/kitchens/15-easy-ways-to-add-color-to-your-kitchen-pictures

Paint them! If they are old, you might have to do some filling and sanding to get them to look nice. Paint them a pretty color. If there are doors missing, you can make the open shelving that is so popular OR take some tension rods and some pretty fabric and make curtains to go over where the doors would be. If you wanted to, you could make a frame on a hinge and add the fabric or chicken wire or an opaque plexiglass in the middle. Add some inexpensive handles (check craigslist and if you find some you like but they aren't the right color, a can of spray paint is your friend!). Lots of ways to spice them up.

Short and on the cheap--quite honestly-chalk paint! You can purchase this for about as low as 20.00 a quart to 35.00. So easy to use. No prep work-you can simply start painting. I do strongly encourage removal of hardware for a better outcome, but if you are a talented painter you might be able to get away without. Simply find your color or mix something up and paint. When you achieve the color you like finish with a glaze if desired or a bit of sanding for more distress, and then with a coat of urethane. These are available in glosses, or matte finishes. Then if budget allows-buy some new handles or spray paint the old. One quart of chalk should be enough to do your average kitchen. Test on inside of cabinet if you wish to create your desired color, although you can always chalk paint over chalk paint. Fun and fast and rewarding project!

You could ModPodge fabric to the faces of the doors. I would also replace the doors of the missing cabinets...if you do put fabric on them you won't have to match the wood on them. You could then add handles/knobs of your choice. You could also strip and re-stain or paint them.
