Open shelving, light upper cabinets and darker (sometimes bold) colors on the lowers or on an island, different counter tops on an island from the rest of the kitchen, lighting under both the top and lower cabinets, pendant lights over an island or peninsula, different back-splashes behind the stove to provide a focal point, quartz used as a counter top over granite, solid counter tops (no tile/grout), butcher block used on part of the counter top, and statement vent hoods.
Do what you like, you have to live with it, not some designer that's going to change their mind every time the wind blows a different way. Don't worry about fads they come and go sometimes very quickly.
