Can you be more specific? For adults? For kids? For specific holidays? Just a few details would be great!

Charlotte, although they are a bit dated I love downloading "Carol Duvall" videos on You Tube.....be specific and type in "card making"....she has guests who make all kinds of cards with scrapbooking stock, stamps and collage materials. These are all levels of difficulty and many different types. Have fun with this!

Pop up cards. There are YouTube videos on this. Also search Pinterest. There are lots of paper craft ideas. Instructables (Instructables.com) has paper crafts.

Also origami. There are origami tutorials for models from simple to complex and in between. I find origami a very satisfying pastime, and I have made nice Xmas ornaments with them.

There are origami boxes and paper cutting boxes you can make. And there is also a picture wallet you can make from origami. It is modular so you can add on if you want. And being origami, you don't glue anything.,so adding is easy.

Google "paper crafts" and you will get many free designs. Same with Pinterest. And there are some sites that aren't free but you can buy pre-printed models to cut out: scenes, books, scrolls, paper dolls and clothes, lots of things. I recommend an Exacto knife for cutting paper to avoid cutting off important pieces.
