composted manure. Manure tea. Both work.
Epsom salts. Goggle epsom salts in the garden. Minerals get leached out of soil and epsom salt puts it back. I use it on my lawn too.

Get a soil test to see what your soil is lacking. Then the answer to your question will be that it depends upon the vegetable you are wanting to fertilize. As an example tomatoes are heavy calcium users and need extra calcium added to the soil but other plants don't need the calcium. That's why it is suggested that plants get rotated yearly in a vegetable garden.
BTW: Epsom salts green things up quickly, that's why people use it on lawns, and are good for growing leaves - vegetables themselves, not so much.
