Are the formica, if so you can paint them with floor paint. Hometalk has tons of info on how to re-do counter tops.

Sotay paint and seal, or use the faux wood grain tool and stain and seal.

I have seen Contac Paper over countertops. It needs to be replaced when it gets cut up. If you keep it extremely clean that should be safe, I hope!
