It would be no different than putting down other plank flooring... except it’s not water friendly.
Manufactured home is like any home. Just built in a factory rather than on site. You can use any flooring you want.
I considered doing the same thing, but am concerned about the water pipes that run under the floors. No way to check ow close they might be to subflooring, since eveything is insulated and covered.
