Have seen old sheet metal used!
we put sheetrock up first then covered it with white embossed wallpaper. There are literally hundreds of styles. They look great on full walls, as chair rails and even going p at an angle on stairs. Chalk painting looks awesome on them as well as some of your light latex paints. We have also used planed down barn wood, cedar and newspaper with modge podge. Have a ball. If you hate it....change it!
Drywall offers fire resistance and superior draft elimination. Most residential building codes require a half hour to one hour fire rating at walls. Also your homeowner insurance may not cover any damage without drywall installed. A lot of fires are electrical within walls. You can install anything you choose over the drywall. Check your building codes ans homeowner insurance carrier. Better be safe than sorry.

My parents used sub flooring which looks like many wood particles, then polyurethane over it. Creative, cheap, and nice results.
