Nothing I could find on the internet about Sunmica joints. Are you sure that is the correct wording?
I've never heard of that. Is it something that you'll have to access at some point? If it never has to be opened, then you could glue a decorative trim on it or put up contact paper or something like that. You could put fabric on it with a spray glue.
Try spakle for a smooth transition
Use drywall patching compound to fill the seams.
