Do I have to cut back climbing roses?

You do not want to cut them all the way back, but they should be pruned to stay manageable and encourage flowering. Heer is a good article explaining how to maintain a climbing rose:

You don't have to, but I would. Not only does trimming shape the bushes into any size/shape, but the new growth is more compact and looks lusher.
One more thing Lora----- wear gloves when you prune! OUCH!!!!
We had them on a fence and never cut but Fiddledd224 is right...be careful...
NO. Only trim pieces that are "out of sorts". But tie back longer ones.
