Wash all the surfaces with Vinegar/water solution (One cup of water, Two Tablespoons of white vinegar). Spray the walls to a damp and pay particular attention to the kitchen area. Make sure to get around range (stove) and any area where curry oil vapors could hide. Keep the windows open to let the house air-dry.

Yeah, that pungent spice lingers and lingers. I assume you do not want to do not want to move, so a compromise would have to come into play. You and the roommate have to work out a curry cooking/reheating plan plus a powerful exhaust fan. Rowgop(Pam)'s method will do the trick, but that is a lot of work to be done often. Keep the ventilation going.
do you have a vent fan over the stove ? if so, open a window a bit and be sure the exhaust fan is on the entire cooking process. Bowls/saucers of white vinegar set around will also help, as will saucers of baking soda; you'll have to replace every week or so, but a couple of tablespoons of baking soda would do a lot to absorb unpleasant odors, the same w/ the white vinegar ..
