What is the best clear coat for artwork?

I would like to spray a clear coat over my mosaic, but can't seem to find one that doesn't yellow.

is this what you are speaking of? If so, why would it need a clear coat finish?
I generally use either spray or brush polyurethane.
but I would recommend doing this to loose shells before you do it to your mosaic, in case you don't like it.
