Putting tile behind stove in kitchen. Can't decide the best kind for low maintenance. High gloss subway, flat natural stone,? Or?

Definitely subway tile - just wipe and clean.
Porcelain tile with sealed grout. Natural stone is much more difficult to keep clean.
