We painted ours. First clean it good then apply primer (we used Valspar) then paint. Turned out beautiful.
frankly, I'd remove a piece of it to see what's underneath and go from there; guaranteed if it really is 100 years old, the panelling was a renovation attempt!
you may get lucky and find horsehair plaster or bead board underneath!
Joint compound on the seams between the panels to smooth it out then just paint the paneling. Or just paint...
At our lake house our previous homeowners applied paneling over the cedar
log cabin walls and painted it . This is a great relief from having all the wood. The paneling actually does look nice painted if you like the cottage type look.
