Old floor in no insulated cottage. How do I reseal properly?

Question

Cottage is not insulated and we think the old floor, 100 years old, is possibly cherry. Nervous to poly the floor as it may not breathe. Any input is great.

As long as sufficient ventilation is maintained under the floor, applying a urethane coating made for floors is just fine. If the crawl space gets moldy due to lack of ventilation you will have more problems than just a non-breathing floor.
