Taking the old fridge out and cutting the cabinet and counter beside and door trim and will make room for nice fancy stainless steel fridge we were gifted when parents sold house to replace our white one. The walls are light grey and the cabinets dark gray. How best to handle removing top cabneta and replacing it?

Cabinets from recent building Era are screwed to each other through the face frame. Remove those screws and lift it down from the wall. I can't give you any advice regarding the countertop until I know what material it is

Maybe consider open shelving for that particular area. You don't have to match identically and it may provide a fresh new look along with that nice new (to you) fridge!
