I would power wash the patio and then hand pick all the weeds. Then, take a spray bottle and cover the bottom with salt. Fill it up with vinegar and add a few drops of dish soap. Shake and spray between pavers. If you see any weeds starting to sprout, spray again with this solution.

I would pour straight vinegar or boiling water between the pavers to kill the plants growing there. More will grow as seeds are blown in by the wind or dropped by birds, so every time you see one, grab a vinegar bottle or boil some water for them too. Wishing you the best.
