First, put in insulation..particularly the ceiling! For stability and strength, use either thin plywood or beadboard. That way a bump will not go through the wall. And there is not floating out or sanding.
You will have to put up some extra studs to hold any sort of board.

Use styrofoam sheets to cover walls between joists and paint them primary colors and such. You could use tacks to put up drawings, coloring projects and other things. It would make an insulated building for you as well. That's my immediate idea and an easy one to do.
There are special requirements for day care businesses... your local licensing board will have guidelines on what the building and space requirements are.... start there..... you will also have to check local building codes and see what those requirements are.... HomeAdvisor.com and Angieslist.com are free referral services for building contractors... all referrals are checked and verified... and the companies cannot pay to be put on the list. Once you have all the information on licensing and code requirements... then you can go about making the building into a day care... or not.
The use of Styrofoam sheets is not aloud, Fire hazard , but when it is covered with sheet rock it still may or may not pass code depending on building use and city/state inspector,
Also. No tacks in a child care space to hold kids art. Etc. kids have been know to ingest these when they find them on floor. You need to figure out all sorts of structural requirements to bring this up to childcare requirements
