if you mean the one from Australia it can take 12-18 months to mature and the “scales“ fall off from bottom up in stages that’s when it’s ripe that’s why it can be eaten in stages. I have pics of one that’s mature and one that’s ripe and cut
The fruit takes a very long time, perhaps as long as a year, to mature and is ripe when the hexagonal plates fall off. That happens slowly, from the base of the fruit upwards, and the fruit may be eaten in stages for this reason. We picked some fruit recently after not bothering or touching it for a year
