Hi Rikki. Adding different flower pots is a good way.
Put in a water feature, firepit and plant some evergreen and flowering shrubs with some flowers around them. Make the rest grass with a walkway to the hot tub.
Some seating would add to the area with low tables and maybe a foot stool.
Flowers make a HUGE statement. Buy some pots and pick up some smaller single plants from your local greenhouse. They are cheap and grow HUGE by the time spring/summer is over.
Try putting some tall grasses around the open area such as zebra grass or P.O. pass grass.

Tall plants will offer a bit of interest. You could also build a trellis or two and plant vines to soften the area. Maybe place a couple of outdoor lounge chairs and tables there as well and maybe one of those outdoor storage bins so you can have a few supplies there, add a couple of towel hooks, etc.
