What is the substance between the paper in sheetrock. It seems to me my Dad said it was lime and used pieces of it in his garden. Can this be true?

I don't think that there's lime in sheetrock. There are different formulations of fillers in it. I've read that it's good for clay soils, but only certain kinds of clay. If the garden is a vegetable garden, I wouldn't suggest it and if you don't have clay, why take the chance of putting more chemicals in the ground?

It is a mixture of gypsum and other mineral products... depending on the individual company's formulation... some of the new ones are more water resistant for use in bathrooms and basements

No lime. Gypsum is a natural mineral adding calcium, hydrated sulfur, water, and binders to keep everything together. Mixture is heated and pressed between two layers of paper.. Drywall. Gysum is also used in making Plaster of Paris.
