For potatoes in a bucket you wait until the greenery at the top turns yellow, then you know your potatoes are ready. You can cut the bottom off the bucket, or cut a square at the bottom and reach in and pull the potatoes out. I am now using a green plastic potato bag for my potatoes, it has a flap that is velcro to the bag, you just pull it down and reach in. Here's a pic. I got them on Amazon.

There are several ways of retrieving your potatoes, the example by Chubby shows a really efficient method with the built in flap, beautiful.

I bought ours at a variety of places and all are producing potatoes at a phenomenal rate. We have burlap bags with an inverted tomato cage to support it, this lets water come in and out so they don't get soggy. Also have them in plastic boxes recycled from a local store, and of course the store-bought plastic bags with handles for potatoes. All methods work for growth. To harvest, just turn them over onto a large piece of cardboard or newspaper. Use the dirt next year.
