Best counter top in kitchen most durable and easy care?

I would like a light counter top in the kitchen but feel that a light colour will develop stains

If you purchase a quality countertop then it will have a durable finish made to repel possible stains from common foods. Providing that the surface is not worn off, and you keep up with the daily regular cleaning, a light colour countertop should not 'develop' stains that are not able to be washed off.
What material of countertop are you considering?
Quartz might be perfect for you. I personally do not care for dark countertops as you can easily "lose" things on a darker granite countertop - my girlfriend has one that is called baby blue eyes or something like that and every time I try and use a needle and thread, I lose it in the flecks of the granite. Not good with cats in the house. Plus, unless you have a ton of natural light and / or excellent lighting, it can make a room appear darker than it really is. BUT purely a matter of personal preference.

If you worry about stains do not choose marble, as it can be fussy. When I was in my late teens I lived in an apartment where the kitchen still had the original (well loved) marble countertops from the 20's. I loved those counters!
