    Hello

    I love the ceiling in your kitchen! is this the only dining area? you could always find a rolling island and use that for prep work as well as eating but I am including some ideas for you and hope it helps. Please post your before and after photos for us to see.

    It is hard to tell your whole layout with just one picture from one angle. Remove clutter so you can see the potential. You will be surprised at how much stuff you don't need.l. I would start with painting everything white or light colors. Move the kitchen table out of the center of your room. It takes up too much valuable real estate. Think about a dropdown table on one of your walls or perhaps an island that serves duel purpose of working and eating space. How about creating an open concept by taking down a wall that opens up your area and combines kitchen, dining and living space use to shared space.     Go all white. Paint everything white, including the ceiling. Use white peel and stick wall tile for your splash guards, paint cabinets white, your counter is find.     white wash the ceiling, paint the cabinets a lighter color to blend with your wall color, remove some items from the counter and store else where if possible

    It looks like the other room attached to the kitchen was an addition, so I wouldn't remove anymore of that wall. That could end up being a structural disaster if not done correctly. What I would do is install some recessed lights, insulate, sheetrock and paint the ceiling white. Unless there is a double roof and the recessed lights and wires can be put in above the kitchen ceiling. I doubt it though, because it looks like roof rafters instead of decorative beams. If you can put in the recessed lights with the ceiling as it is, paint the ceiling white and leave the rafters the natural color. Reinstall or get a new the chandelier or put in a ceiling fan.

    Paint the walls a light color and the cabinets white. Get new hardware for the cabinets (they can match the chandelier or fan that you put in). Try to remove as much as you can from the counters and floor. Install under cabinet rope lighting. As for the eating area, is there an area in another room to put a small table and chairs?

    I can't see the other side of the kitchen. A couple more pictures would help us to help you more.
