Yes you can. Or you can do a white wash on them if you just want to tone down the color. I use a vacuum to get the dust off and then you can use latex paint and a brush of you want full coverage, or you can dilute the paint with water in a 50/50 ratio apply it with a brush and then wipe it off if it's too heavy a coat until you get the look you are after. Remember that every brick is a little different and will accept the paint differently. You can always touch up the grout with an artists brush or a small foam brush. Good luck.

Yes! you can fully paint it with latex or whitewash it, for a softer look, using a 'German Smear' technique (on faux brick, dilute white latex paint and rag on lightly). I've also seen it partially plastered. If it's in the kitchen, whatever you do, I would seal it after so it's easy to keep clean.

You can use any color you want, or you can mix your own color using a few colors mixed together until you get what you like, like a light gray with just a little blue mixed in. I always started out with a white or light grey, mixed in a ratio of 70/30 water to paint and then let that dry to see if I liked that. You can always add more paint or whitewash but once it's dry it's harder to take it off. I even have seen where someone did every other brick in blue, then orange, then green etc. Not my style but whatever. If you just want to soften the look and change the color but still be able to tell that it's brick I would use a whitewash (in whatever color you choose) and start with one brick and you will be able to wipe it off while it's still wet with a wet cloth if you don't like it. You can lightly sponge a white wash colour over the brick, and paint the mortar white, or any other colour. Blend it in with a rag or soften with a brush, so it doesn't look like 80's sponging.
