beadboard is inexpensive but is not water resistant. pressure treated 1x4's are more expensive but are water resistant. you could achieve a rustic farmhouse look with those and sanding, stain or paint. no worries. I would also do a waterproof sealant behind any wood treatment.
Could add a lot of character to the bath. It's probably a small room, so you get a lot of bang for your buck.
Take down bulkhead, have electrician install bath lightening, frame the mirror. Visit Home Depot or others, find crown molding for bath its made of foam I just had my master bath done with special crow mold.
Crown moulding can be difficult to install if you do not have previous experience with cutting mitres and using all the specific tools.
If you are wanting to update the bathroom, my suggestion for what would be the fastest and easiest way, is to remove the 1990's balloon valance and verticals, and have a single shutter installed instead. As the window is a focal point seen from all directions, this change would pack a lot of punch, and would not involve any demolition or construction.
The California/Plantation shutter style without the centre rod are the cleanest looking and would make the window appear larger.
Home Depot sells a PVC bead board that is water resistant. I put it in my front bath and it looks great. It is two sided, either small slat look or wide slate.
A little hint- If the corners do not meet exactly, use a dowel, to fill in the spot.
