How do I finish wall after removing soffit?

I’m removing the soffit in my kitchen. Can I just put drywall in the gaps between the existing wall and new ceiling?

    I don't see why not but ask a professional...your metal tile looks awesome btw!!

    You may be able to cover the gap with crown molding.

    I’m thinking when I can just drywall and the new cabinets will cover it.

    Yes you can. You should finish out your plaster board from edge to edge butting against the existing plaster board,tape and bed the edges. Pro tip, mark where the studs are so you know where the cabinets will mount to!

    I noticed a bunch of a holes above your stove. If you were thinking about a vented hood above the stove. Thank about reinforcing the wall behind the stove to support the weight of a vented hood. As long as you’re going to be doing plaster work anyway. Now would be a good time to consider that.
