Put a piece of plastic wrap over the the ice cream. Right on top of it.

Cover the ice cream with plastic wrap before you place the top into the container. Works every time!

The ice crystals are forming from moisture being refrozen. The solution is to lay a barrier (plastic wrap) right on top of the ice cream. So, when you take the ice cream out of the freezer, scoop out desired amount, then lay plastic wrap right on top of the ice cream left in the carton. Continue using this method until all the ice cream is gone. Best of luck to you.

Yes use plastic wrap! I can't say for sure if it works though, because ours never lasts long enough to form crystals, lol!
