Absolutely beautiful! I would have set the footings for a cover while the flagstone was being installed. Do you want a full coverage patio cover? Or a pergola? A full cover will make it dark and trap heat. Great in winter, but not so much in summer. Here is a pergola option.
Gotcha! Understand completely. I used to do the same thing. If you are attaching to any structure, you will need to pull a permit. Here are some sites to get you started.
I would bury 4x4 pressure treated boards in the ground right were it meets the patio then run your header between then you should be able to attach rafters to house and header
yeah, I don't mind awnings but not practical with the wind we have here in Texas. We had a metal canopy and it was destroyed within a year during a wind storm.
Julie, native Texan here...! I had an auto retractable awning @ my last home. They come with wind sensors that will close the awning if the wind gets up. Mine was a Sunsetter. It was pricey and I loved it!

Run electrical to install lights and ceiling fans and you will be all set! Think about running a natural gas line for your grill too. Enjoy. 🎉
I would go with a hard top gazebo

We had a gazebo... the texas wind destroyed it after one year. I loved it but just not practical even with anchors.

Install a pergola and then put an ondura roof on it. Or...for a less expensive option use clear panels made from plastic.
A non-construction option would be to attach a retractable awning on the side of the building.

Ah, understand, Julie. Considering that, then my next best suggestion would be a pergola, as has been suggested by others.
