    Hi Smo, if you are able to lift your countertops, you can use 3/4 or more plywood, or which ever is your choice, to raise your counters up. Remember this, when you lift them, you will be exposing more and more of your base cabinet. However, you can purchase a larger bullnose tile to cover what you add.

    Your cabinets should have been screwed into the walls and the cabinets on each side. You should be able to unscrew them and move them higher. Then your backsplash will need to have something added on top to cover the open wall area and that should give you more height above your countertop.
