Here's some before and afters I found on google image search. I would definitely roll up my sleeves and start painting :) the Before and after of the oak cabinets though that were restained dark gave me pause. Perhaps you could restain dark some specific elements like the beams?

With no pictures its hard to say what would be your best solution. But I like the idea of a darker stain or that will bring to much attention to them, I would white wash them. As for all the doorway, baseboard and window trims, I prefer them painted to blend with the rooms more like a nice crisp white paint.

If all the wood work has been painted except for the kitchen, perhaps painting the wood work in the kitchen would be the best idea. I don't think you want to strip any of the wood that has been painted already. You could leave some of the wood in the kitchen natural or restain if it will enhance the kitchen, but painting it would make it flow and open things up. The last before and after picture that GrandmasHouseDIY had was really dramatic and totally changed the room and brightened it incredibly, is that more of the look you are after? Good luck with your project Lisa!
