Economical...as in cheap and fast?...durable, $$ more upfront ?... Determine your budget, and don't forget to add the gloves and equipment.

You will be cleaning this and looking at it as long as you live in this house.

A flat piece of laminate goes up quickly, is easy to clean, and is less expensive than several other options. It needs to be sealed at countertop at the wall to prevent water and dirt from seeping into the crack.

Ceramic tile with grout is an option. You will want to seal the grout, or spend your time scrubbing with a toothbrush and bleach. Ask me how I know this.

The mosaic tile in Marie Rother's example, above, is a migraine trigger for me, much like a disco ball. My vote is 4x4 ceramic tiles. It takes longer, costs a bit more, and lasts for years.

You can go the cheap and easy route, and pay for it twice, ...once now, and again when you replace it with something else.

Just my opinion, your mileage may vary.
