My husband textured our family room walls and bathroom walls, above the tile, using drywall mud. It's a bit of a pain to dust; but, it's been 7 years, and I still like the look a lot. So much faster and easier than repairing the mess stripping off old wallpaper caused.
What a wonderful opportunity to tap your artistic side. There is a 'sand' product you can add to your paint that will give you a textured look once rolled onto your walls. I found mine at Ace Hardware but I'm sure the other stores will have it. Or, you could apply joint compound to the walls, like frosting a cake, but smoothing down the high spots. Go For It! You Can Do this. Best of luck.
Try headboard paneling. You can buy it by the panel very economically and Loews will cut each panel to your measurements.
BEADBOARD paneling, not headboard
Home Depot sells a neutral 'paint ' that has sand or some such texture for walls such as yours. I've got a can. Wish they sold ambition!
Here's another option: sponge paint a faux finish on your walls. Try celery green & white over cream or light blue & white over cream, or shades of yellow & white over cream. This technique will disguise irregular surfaces. A color wash is also a wonderful technique to try. Best of luck.
