Sallie, here's a video explaining how to take down the ceiling, but he is going to replace with drywall. I suppose you could skip the drywall and plank the ceiling across the rafters. I would call a builder and ask them if the drywall has to be put up before you plank it.

If your planks are not going to fit together tightly, use the drywall. Yo don't want dirt and mousepoo sifting down into the room.
