Hi. Put a couple in brown paper bag(s) and after awhile they will ripen. Don't overload the bags, they will rot. However, fried green tomatoes are the best! Batter like fish and fry. So good!
Roasted & grilled or even smoked green tomatoes are also good if you don't eat or want fried foods.
I let mine ripen on cookie sheets in a cool room that gets good sunlight. Make sure not to crowd them & check daily as they ripen sporadically. We were able to have
fresh tomatoes for weeks.
