The heat and humidity emitted from your washer and dryer will severely limit what you can store in that pantry, unless you can find a way to control them. Chocolates, cereals, grains, crackers, etc. may have a very short shelf life in this location.
Based on Oliva's point, I would say you should make the space with canned items in mind. You can build it out of shelving board and make the height 6 - 8" for most shelves. Let your items dictate the height. You didn't mention the depth so I'm assuming washer & dryer depth. That's rather deep so you would want to put baskets or some type of pull outs.
When you do it, document it and post the project.
