These Potpourri pies have been around for quite some time. I haven't thought about them in years. The Holidays will be here before we know it (don't shoot the messenger!) and I've been trying to think of something different to give out to my neighbors.

Then these popped into my head!

Gather your ingredients:

1 cup of flour
1 cup of salt
Water
Pie tin (any size)
Potpourri
Butter knife
Mix together flour and salt, mix in enough water to
form a workable but not sticky, dough.
Heat oven to 250 degrees.

Roll out the dough into a large circle approximately 1/4" thick, just as you would for a regular pie.
Line tin with the rolled out dough.

Wrap up any leftover dough for later.
Cook pie crust for 30 minutes.
Let cool.
Fill cooled crust with potpourri. You can add a few drop of essential oils if you wish.
Take remaining dough scraps and roll into a large circle.
Cut into strips for lattice top crust.
Dampen dough to "glue" down to already cooked crust.
Trim ends.
Let top crust dry for 1-2 days. It will dry hard.
You can decorate the top of the pie for a festive look.
Ideas include: fabric, ribbon, dried apples, cinnamon sticks....
you could wrap it in cellophane with a bow for a nice hostess gift. Don't forget to make one for yourself!
