How do you know if you should pick green toms?

Nights are getting colder. Tomatoes are beautiful but still green.

just don't want them to 'frost' --- or get below 60f ... pick now and ripen on a counter/shelf -- don't need 'light' ; or make Green Tomato Pickles' ... there are some good 'Icebox' recipes that don't need heat canning process ..
