Generally fall vegetables are Brussel sprouts, kale salad greens cabbages. Not sure for Texas though. And maybe too late to start from seed. You may have to purchase plants form your local garden center.

Here's an article from a fellow Texas gardener that you'll find helpful (and based on your zip code, I don't think you're far from her): https://www.gardenupgreen.com/2018/09/four-reasons-to-fall-garden.html

I suggest you contact your County Extension Agent. They can provide you with good information about what will grow best in your specific area.

EXPERIMENT - RADISH, CARROT, ONIONS, KALE. CHOOSE PLANTS THAT MATURE IN TIME

YOU HAVE FOR GROWING SEASON. BEETS YOU CAN EAT TOPS AND BOTTOMS. LOOKING UP 'SEED SELLERS' SITES MIGHT BE WORTH CONSIDERING. MANY FLOWERS AND WEEDS ARE EDIBLE eg. NASTURTIUM, DANDELIONS AND GRASS[for juicing]. MANY DOLLAR STORES SELL SEEDS.
