Butcherblock wood is an inexpensive countertop option. They sell it at Ikea.

Contact paper or paint (Giani makes a kit). You can also replace the formica if they are the kind that are squared off at the edge instead of rounded. I've seen projects where someone removed the formica and then painted and sealed the wood underneath but I'm not sure about how to move forward on that route.

There is a Rustoleum product for countertops . I've seen it in person and it looks very good. It is a series of steps that gives the countertops a stippled, granite look then has a strong sealer on top for durability.
